My daughter also loves peanut butter, and since she's a vegetarian, it's her main source of protein. We go through a huge jar about every two weeks and there are many times throughout the week where you could find both of us sitting in the kitchen, spoons in hand, eating right out of the jar.
Lately, I've been making cupcakes on a weekly basis, and the most requested have been chocolate (with cinnamon) with peanut butter icing - so you're basically eating a big Reese's cup. I make regular and minis, which all seem to disappear in record time. No complaining, I love to make my family happy.
This recipe is my favorite for PB icing - goes great on chocolate, vanilla, peanut butter & cinnamon lovelies.
Peanut Butter Icing
- 3/4 cup smooth pb
- 3/4 cup (1 1/2 sticks) butter, at room temp
- 1 tablespoon vanilla extract
- 3 cups confectioners sugar
- 3 tablespoons milk
Add vanilla, mix well.
Slowly add the sugar & milk, 1 cup & 1 tbsp at a time, mixing well after each.
Beat well, on high (approx. 4 minutes) until light & fluffy - you want that perfect texture for piping without it being too runny.
When it's just right, spread over your cake or add to your piping bag and decorate your cupcakes.
