The end of summer...

Labor Day is this coming weekend, and while I'll be busy hosting my daughter's 4th birthday party, you might be headed to a picnic. Labor Day is the official end of summer and marks the beginning of a new school year for most -- unless you live in the south where the kids have been going for weeks now, or in our area where the kids started yesterday.

My daughter's birthday is on the 7th, so to me, 'Labor Day' refers to childbirth and not career labor, but both are a reason to celebrate. So, since most of you have the day off from work and are probably planning or going to one last hooray, I thought a nice fruit salad recipe would be perfect.

Tangy Fruit Salad
  • 1/2 of a cantaloupe, cut into bite-size pieces
  • 1 (16oz) container of strawberries, quartered
  • 1 small apple, your choice, cut into 1 inch cubes
  • 1 1/2 cups blueberries
  • 4 medium kiwis, cut into bite size pieces
  • 2 cups green grapes
For the dressing: 
  • 3 tablespoons honey
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 3 tablespoons finely chopped fresh mint leaves
Place all of the fruit into a large bowl.

In a small bowl, whisk the honey, lime juice, zest, and mint.

Right before serving, pour the dressing over the fruit and toss gently to combine.
You could make more dressing if you feel it's too light, but be careful - this little amount packs a good punch!
