Buffalo Chicken Sandwiches
- 2 large boneless, skinless chicken breasts
- 1 cup hot sauce
- salt & pepper
- 1 tbsp. red wine vinegar
- 1/2 tbsp. Worcestershire sauce
- 1 tbsp. extra virgin olive oil
- 1 tsp. garlic
- 1 tsp. chili powder
- 1 tsp. cayenne pepper
- 1 tsp. Italian seasoning
- 4 buns
- Lettuce
- Lite ranch or bleu cheese dressing
Once your sauce is ready, add the chicken, refrigerate until you're ready to start cooking.
In a skillet, over medium heat, add the chicken & some oil. Allow to cook until no longer pink, but not all the way done. Remove the chicken from the skillet, use 2 forks and shred the chicken into small but manageable pieces. Once all the chicken is shredded, return to the skillet to finish cooking.
Once the shredded chicken is done, move it from the skillet, add it to a bowl and mix with the reserved sauce.
To serve, I toast Super Soft Vienna Roles, add your lettuce of choice, a scoop of saucy chicken and drizzle with either lite ranch or bleu cheese dressing. These are big sandwiches so I'd definitely recommend using a larger bun. These are messy, but oh so spicy & good!
