With the holiday weekend upon us, we want to remember to eat our fruits & veggies and not overdue it on the meat & desserts. This dish will make your weekend picnic a success!

Orzo Medley
- 2 tbsp. Extra-virgin olive oil
- 1 medium onion, chopped
- 1/2 large green pepper, chopped
- 1/2 large red pepper, chopped
- 3 carrots, peeled & sliced
- 2 medium broccoli crowns, washed and cut
- 6oz. fresh mushrooms, sliced
- 1 handful of pea-pods, washed
- 1 large garlic clove, minced
- 1/2 box Orzo pasta
- 3/4 jar of your favorite Marinara sauce
- salt & pepper
- 1 tsp. each oregano, basil, parsley
- Parmigiano Reggiano cheese
In a large skillet over medium heat, add the oil, onion and peppers, cook for 3-5 minutes.
Add the carrots, broccoli, mushrooms, pea-pods and garlic - cook for 8-10 minutes. You want the veggies cooked, but not too soft.
Once the orzo is done, drain it and return it to the large pot. Add the veggie mixture. Stir.
Add the marinara sauce, stir. Cook for 3-5 minutes or until hot.
Add salt, pepper, oregano, basil, and parsley. Cook 3 minutes.
When serving, sprinkle with PR cheese. Enjoy!
