Crunchy Honey Chicken
- 2 large boneless, skinless chicken breasts - slice into strips
- salt & pepper
- 1 cup flour
- 2 large eggs
- 2 tablespoons milk
- 2 cups Corn Flakes cereal
- 1 cup bread crumbs
- 1 tablespoon paprika
- 2 tablespoons Italian seasoning
- 1/4 teaspoon granulated garlic
- 1 tablespoon honey
- Honey Mustard - for dipping
In a large ziploc bag, combine cereal, bread crumbs, paprika, Italian seasoning and garlic. Using a rolling pin or large measuring cup, hit the cereal mixture to break everything up into small pieces. (I wanted the cereal pieces to be a little smaller than my pinkie nail) Once broken up, transfer the breading mixture to another shallow bowl.
Line a cookie sheet with foil, spray with Pam & place it near the breading station. In batches, dip the flour-coated chicken into the egg mixture and then in the breading and place on baking sheet. Continue this process for the rest of your strips. Once all strips are on the baking sheet, drizzle evenly with honey.
Bake your strips at 400 degrees for 15 minutes (or until evenly cooked through). Serve with a side of honey mustard, or your favorite sauce. These strips can also be served cold, like for a picnic - they'd go great with a veggie & dip tray.
I steamed 2 broccoli crowns (and drizzled some melted butter over them) to go with my chicken. Feel free to serve these strips with your favorite side dish - they'd go great with some sweet potato fries!
