Chunky Apple Cake
1/2 cup butter, softened
2 cups sugar
3/4 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon baking soda
6 cups chopped peeled tart apples (I cut them into 1/2 inch cubes)
1 tablespoon lemon juice (pour over apples once they're peeled & chopped - we don't want brown apples!)
In a large bowl, cream the butter, sugar and vanilla. Add eggs, one at a time, and beat well after each egg is added. In a separate bowl, combine flour, cinnamon, nutmeg, salt & baking soda; gradually add to creamed mixture and mix well. The batter will be stiff. Stir in apples until well mixed.
Spread into a greased 13x9 dish. Bake at 350 for 40 or until the top is lightly browned and springs back when touched. Remove from oven and cool for 30 minutes before cutting & serving.
Butterscotch Sauce
1/2 cup packed brown sugar
1/4 cup butter
1/2 cup heavy whipping cream
In a saucepan, combine brown sugar and butter. Cook over medium heat until butter is melted. Gradually add cream. Bring to a slow boil & stir constantly. Remove from heat. Serve drizzled over cake pieces.

To die for. Be careful, you might be tempted to eat the whole batch on your own!
